Mandarin Cookie Salad is one of my favorites, but a few months back someone served this "same" salad but with different fruit and different cookies. I decided to see if I could duplicate what I had eaten. I'm pretty sure the second version used sugar cookies, but after checking several stores, I have not been able to find them on the shelves. So here is my version. (Terry)
BLUEBERRY LEMON COOKIE SALAD
2 C cold buttermilk
1 pkg. (5.1 oz) instant vanilla pudding mix
1 carton (12 oz) frozen whipped topping, thawed
2 1/2 C frozen blueberries--add to salad frozen, but rinse away any ice crystals
1 pkg. (1#) Mother's brand iced lemonade cookies--very coarsely crushed
In a bowl whisk buttermilk and pudding until smooth. Stir in whipped topping until completely blended. Fold in blueberries. Fold in cookie pieces. Cover and refrigerate until serving. Even better the second day.
